Lentil Veggie Bake
I was browsing Pinterest trying to get some Inspo for a different type of dish to make with lentils! I was so sick of cooking them by themselves & trying to eat them plain (who wouldn’t be).
I stumbled upon a lentil veggie bake recipe, & kind of just followed the basics of cooking the rice & lentils together before mixing it all up with the cooked veggies & baking. I normally don't follow recipes & just create/experiment on my own -so if I do ever find a recipe, I always just loosely follow it! I have included all of the details on how I made the dish below!
The ingredients in this recipe make about 8-10 servings. I was able to get 3 meals out of it & Daniel ate about 5!
Ingredients:
1.5 cup dry lentils (quick cook)
1 cup rice(I used brown basmati)
**If you use regular white rice, decrease the liquid by 1 cup)
1325 ml vegetable stock
1 whole leek
3 leaves kale
10 mushrooms(2 cups)
4 garlic gloves
2 peppers (I did 1 yellow & 1 red)
2 packs clubhouse shepherd pie mix
Lots of black pepper
200g cheese (or light layer to put overtop of bake before putting in the oven)
use vegan cheese alternative to make vegan
Instructions:
Add 1200ml vegetable stock, lentils & rice into a medium sized pot. Cover. Bring to a boil. Stir occasionally. Put to low-medium heat, cover & let stand for 20-25 mins. Stir. Continue cooking until liquid is cooked off.
Finely chop leek & garlic. Add to medium/large sized saucepan with 2 tbsp coconut oil. Let cook, stirring occasionally for 5-7 mins before adding other veggies
Preheat oven to 375
Wash kale & tear leaves into small pieces. Chop mushrooms & red peppers. Add to the medium sized saucepan of leeks & garlic. Allow to cook for another 5-7 mins stirring occasionally.
Once rice & lentil mixture is cooked, add to a large mixing bowl. Stir in 1 pack shepherds pie seasoning. Add 125ml vegetable stock. Stir until well combined.
Stir in cooked veggies. Add another pack of seasoning, and stir until well-combined. Add lots of black pepper.
Pour mixture into a baking dish(I used 13 x 9). Top with cheese.
Bake for 25-30 mins, or until cheese is bubbling/starting to turn golden brown.
