Healthy Chocolate Zucchini Muffins

Wowowow. These muffins are so dang good . So chocolatey. So moist & soft & the kids LOVED them! Majority of ingredients are whole food based - so they’re hearty & filling too! 

Ingredients

  • 4 cups shredded zucchini 

  • 1 cup maple syrup

  • 1.5 cup melted coconut oil

  • 4 eggs

  • 2 cups quick oats

  • 2 cups almond flour

  • 1/2 cup cocoa powder

  • 2 scoops arbonne chocolate protein

  • 1.5 cups choc chips

  • 1 tsp cinnamon

  • 1 tsp baking powder

Instructions

Mix dry ingredients together(protein powder, cocoa powder, almond flour, baking powder, quick oats, cinnamon). Mix wet ingredients in a separate bowl(eggs, zucchini, maple syrup, coconut oil). Once well combined mix dry into wet. Pour into 24 lined muffin tins. 

Bake at 350 for 30 mins - makes 24 muffins!
